We’re excited to share that Chef Steve Coppolillo and Chef Brian Abbott of Rosebud Steakhouse were recently featured on WGN’s Spotlight Chicago, where our team had the opportunity to showcase some of our favorite grilling techniques! As proud purveyors of USDA Prime Meats by Linz Heritage Angus steaks, we know a thing or two about grilling perfection—and we’re thrilled to pass along a few expert tips to help you elevate your next backyard barbecue.
Let Your Meat Bloom Before Cooking
One of the most important (and often overlooked) steps in grilling is letting your meat “bloom.” Before your steak hits the grill, allow it to rest at room temperature for 30-45 minutes. This simple step ensures even cooking and helps the meat retain its natural juices for maximum tenderness and flavor. Cold steaks straight from the fridge can cook unevenly, so give your meat time to “bloom”—you’ll taste the difference!
Skip the Marinade—Go for a Rub Instead
While marinades can be tempting, at Rosebud Steakhouse we believe that quality meat speaks for itself. Instead of soaking your steak in a marinade, opt for a dry rub. A good rub—made with salt, pepper, and your favorite spices—will enhance the natural flavors of the beef without overpowering them. Rubs also create that crave-worthy crust on the outside of the steak, locking in moisture and adding a delicious texture.
Why We Love These Methods
- Blooming allows for more even cooking and juicier results.
- Rubs highlight the quality and flavor of our locally sourced, dry- and wet-aged cuts.
As seen on WGN’s Spotlight Chicago, these simple tips can take your grilling game to the next level—whether you’re firing up the backyard grill or enjoying a world-class steak at one of our locations in Chicago, IL; Munster, IN; Wheeling, IL or Southlake, TX.
